Things you can do with a Sweet Potato   Leave a comment

In Belize, one of the best desserts is Potato Pone (Pudding).  It is sweet, decadent and filling.  If you are a sweet tooth like me you’ll make this all the time.  Here’s the receipe:



2 lbs sweet white potatoes

1/2 cup finely chopped ginger with skin

1 grated lime or lemon rind

1/4 cup coconut oil

1 egg

1 cup of light brown sugar

1  cup coconut milk

1/2 cup evaporated milk

1 tsp vanilla 

1/4 cup of golden raisins (optional)

1/2 tsp of cinnamon

1/2 tsp of nutmeg

1/2 tsp of ground ginger

1/4 salt or pinch of salt

Peel and cubed white sweet potatoes then boil with chopped ginger until soft.  After boiling drain the water and remove ginger. Mash sweet potatoes in a bowl.  Add sugar, egg and coconut milk.  Stir until sugar dissolves, then add evaporated milk, coconut oil,vanilla, salt, cinnamon, nutmeg, ground ginger, lemon/lime rind and raisins(optional). Stir until properly mixed and pour into a greased 9×13 baking pan or casserole dish.

Bake at 350 degrees for 40 – 50 minutes. 

Makes 8-10 servings.
